Spiralized Zucchini Noodles with Oven Blistered Cherry Tomato

Ingredients

2 cups spiral sliced zucchini noodles (using 6 mm blade)
1 cup cherry tomatoes
2 tbsp chopped fresh basil
1 tbsp olive oil
1/2 tsp garlic
¼ tsp sea salt

Directions

  1. Preheat oven to 425 and line a small baking sheet with parchment paper. Toss cherry tomatoes in 1 tsp olive oil and minced garlic. Pour onto baking sheet and bake 15 minutes.
  2. In the meantime, spiral size 3 cups zucchini and place into a mixing bowl with remaining olive oil and basil, sea salt and blistered tomatoes, gently toss to coat zucchini. Serve warm or chilled.
