Jalapeño Zucchini Fritters

Yield: 4 fritters

Ingredients

1 egg
1 cup grated broccoli (or riced using a food processor)
1 cup zucchini, grated
1 tbsp jalapeño, minced
2 tbsp nutritional yeast
1/8 t garlic powder
1/4 tsp sea salt
1 tbsp olive oil for cooking

Directions

  1. Using a clean kitchen towel or paper towel, wring out grated zucchini over sink, releasing excess moisture. In a large mixing add zucchini, broccoli, jalapeño, egg, nutritional yeast, garlic powder and sea salt. Stir well to incorporate.
  2. Heat olive oil in a non-stick skillet over medium heat. Using a ⅓ cup measuring cup, scoop mixture onto skillet 1-2 fritters at a time and use a spatula to form into circular patties. Cook 3-4 minutes. Gently flip and cook an additional 4 minutes.
