Cauliflower Tabbouleh

Ingredients

2 cups riced cauliflower
1/2 cup cucumber, finely chopped
1/2 cup tomato, finely chopped
1/3 cup red onion, minced
1 cup parsley, minced
1/4 cup mint, minced
1 tbsp olive oil
3 tbsp lemon juice
1 clove garlic, minced
1/4 tsp sea salt
1/8 tsp black pepper

Directions

  1. Combine ingredients in a mixing bowl and stir well. Refrigerate 30 minutes before serving.
