Grilled Flank Steak and Chimichurri Vegetable Salad

Ingredients

3-6 oz. flank steak, fat trimmed
¼ tsp dried oregano
1/8 tsp coarse sea salt
1/8 tsp black pepper

Ingredients for salad

1 cup beefsteak or roma tomato, chopped
1 and 1/3 cups zucchini, diced
1 cup bell pepper, diced

Ingredients for dressing

1 tbsp olive oil
2 tbsp red wine vinegar
1 tbsp cilantro, minced
1 tbsp parsley, minced
1 clove garlic, minced
1/8 tsp sea salt
Black pepper to taste

Directions

  1. Preheat grill to 425 degrees and lightly grease with olive oil. Season steak with oregano, sea salt and black pepper on both sides. Place onto grill and cook 5 minutes each side.
  2. While steak grills, combine ingredients for the salad and in a mixing bowl and stir well to combine. Slice steak and serve alongside the salad.
