Herbed Turkey Cutlets with Vegetable Stuffing

Ingredients for Turkey Cutlet

3-6 oz turkey cutlet
1/4 t dried sage
1/4 tsp dried thyme
1.5 tsp olive oil
Sea salt and black pepper to taste 

Ingredients for Vegetable Stuffing

2 cups cauliflower, finely chopped
1 cup celery, thinly sliced
1/2 cup sweet white onion, chopped
1.5 tsp olive oil
1 t fresh chopped rosemary
1 t fresh chopped sage
1/2 tsp fresh thyme, leaves only
1/4 tsp sea salt

Directions

  1. Heat 1.5 tsp olive oil in a skillet over medium heat and add cauliflower, onion, and celery along with herbs. Cook covered for 12-15 minutes, stirring occasionally.
  2. Heat 1.5 tsp olive oil in a separate skillet over medium/high heat. Season cutlet with thyme, sage, salt, and pepper. Place onto skillet and cook 6-7 minutes on each side. Serve hot alongside vegetable stuffing.
