Smoky Turkey Chili

Yield: 2 servings

Ingredients

6-12 ounces ground turkey
2 cups tomato, diced
2 cup bell pepper, diced
1 cup celery, thinly sliced
1/2 cup white onion, chopped
2 cups chicken stock
1 tbsp ground cumin
1/2 tsp smoked paprika
1/4 tsp garlic powder
1/4 tsp sea salt
1 tbsp olive oil for cooking
Jalapeño and cilantro for serving

Directions

  1. In a large pot, heat olive oil over medium heat. Add ground turkey and use a spatula to break up into small crumbles. Cook 3 minutes. Add cumin, smoked paprika, garlic powder and sea salt. Stir well. Cook 5 minutes longer.
  2. Add celery, onion, bell pepper and tomatoes. Cook for 5 minutes, covered. Add chicken broth and stir well. Bring to a boil. Reduce heat and simmer 20 minutes uncovered. Serve hot with chopped cilantro and jalapeño.
