Ingredients

3-6 oz. boneless skinless chicken breast
¼ tsp dried thyme
1/8 tsp garlic powder
1/8 tsp sea salt
1/8 tsp black pepper

Ingredients for salad

2 cups tricolor or heirloom cherry tomatoes, halved
1 cup cucumber, diced
3 cups arugula

Ingredients for dressing

1 tbsp olive oil
2 tbsp lemon juice
2 tbsp fresh basil, chopped
1/8 tsp sea salt

Directions

  1. Preheat grill to 400 degrees and lightly grease with olive oil. Season chicken breast on both sides with thyme, garlic powder, sea salt, and black pepper. Place onto grill and cook for 10 minutes on each side or until cooked through.
  2. While chicken cooks, combine ingredients for salad and dressing in a mixing bowl. Lightly toss to combine. Serve chicken sliced over the salad.
