Greek Roasted Cauliflower Salad

Ingredients

1 cup cauliflower florets
½ cup diced red onion
½ cup grape tomatoes halved
½ cup diced cucumber
1 handful truly parsley, chopped
1/2 tsp dried dill
1/4 tsp dried oregano
2 tbsp fresh lemon juice
1 tbsp olive oil

Directions

  1. Preheat oven to 425 degrees. Toss cauliflower florets in 1 tsp olive oil and place onto parchment paper lined baking sheet. Roast for 10 minutes. Remove from oven and cool at room temperature for 5 minutes.
  2. In a mixing bowl, combine tomatoes, cucumber, red onion, parsley, dill oregano, remaining olive oil and lemon juice. Add roasted cauliflower. Stir to combine. Serve warm or chilled.
